Firstly, to engage in a battle you have to spot a Grunt that is within your radius. They can usually be found at a PokeStop, and when you approach them, the disc of the PokeStop becomes black, and then they suddenly emerge, ready to fight. Then, the regular stuff happens where you choose your team of three Pokemon, and start the battle.

Usually, Grunts use Pokemon of one type only, and which type you will battle will be hinted through the dialogue that you have with the Grunt at the beginning, after you spin the Disc.
